How to choose a live lobster?
Many argue that lobsters are best in the spring, when their shells are hardest, but the most important prerequisite for delicious lobster is a fresh one, spring or winter. Any purchased lobster should be alive and kicking. Remember that the colder the lobster is kept the more sluggish it will be, so don't look over a live but very cold and not as feisty crustacean. The most tender lobsters are under 2 pounds, and are also easier to maneuver that size or smaller.
